We needed tea sandwiches for a client's buffet; I like date-nut cookies. It worked surprisingly well... not too sweet, but still interesting.
We did tea sandwiches the first time, then re-used the leftover spread to make canapes for a different client the next day, then had it with pita bread, hummus, and tabbouli for our lunch the day after that :p

| PREPERATION |
|
For sandwiches - cut white bread into desired shape (squares, triangles, circles, whatever)
For Canapes - Cut bread and toast until golden-brown
|

| DIRECTIONS |
|
Mix everything together; season with salt and pepper.

| PRESENTATION |
|
For the sandwiches, I made the spread into quenelles and skewered it between untoasted white bread squares.
For the canapes, I put the spread in a piping bag and piped rosettes onto toast squares, then garnished with a larger piece of date and a small mint leaf.
